Grilled Peaches, Arugula & Feta Salad

Serves 2-4



  • 2 peaches, pitted and halved
  • olive oil
  • 3 cups arugula
  • 1/3 cup of toasted pecan halves
  • 1/3 cup crumbled feta cheese (if you like it!)


  • 3 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • salt and pepper


Brush all sides of the peaches lightly with of olive oil. Grill the peaches over a medium fire until they brown lightly and begin to soften slightly, 4 to 6 minutes on each side, or grill over the stove, flesh down in a cast iron pan. Let cool and cut into 1/2 wedges.

In a small bowl, whisk together the balsamic vinegar and olive oil, along with salt and pepper to taste. Combine all ingredients and enjoy!
