- 4-5 tree ripened peaches
- zest of one lemon
- 1 cup marscapone cheese (sour cream will do in a pinch)
- 1/4 cup sugar
- mint sprigs to garnish
- 1 batch of your favorite pizza dough
- olive/vegetable oil
Mix sugar, lemon zest, and marscapone. Set aside. Quarter peaches and sprinkle with sugar. Set peaches over medium heat on the grill. Turn so each side gets lightly caramelized. When peaches are soft, they are done. Roll and oil pizza dough. Place on medium heat grill, flip once when first side is lightly browned. Remove pizza dough from heat. Spread cheese mixture, top with grilled peaches, and mint leaves. Enjoy. Don’t forget to take extra napkins!
